Picadillo chayote salad recipe, vegan food
Easy and delicious recipe with mexican products. As so many restaurants are closed we decided to get busy in the kitchen with lots more home cooked meals.
Chayote (pronounced chahy-oh-tee) is a light green, pear-shaped fruit with a single, large pit and edible flesh and skin. The flesh of the chayote is mild in flavor. It has a texture somewhere in between a potato and cucumber. Although technically a fruit, chayote is often used more like a vegetable in Latin cuisine.
Are you ready to taste this salad with chayote?
Ingredients:
- 1/2 chayote - peeled, stone removed & julienned
- 100g sweetcorn or maize
- 2 tbsp of jalapenos peppers finely chopped
- 1 tbsp olive oil
- 1-2 tbsp lime juice
- 1 tsp agave syrup
- 1 tbsp ajonjoli enchilado guajillo
Mix all dressing ingredients together well. Stir through rest of ingredients and serve.
